Spicy Chicken Potjie – Invite your friends for this great meal

The days are getting even warmer and it’s time for those outdoor cooking adventures. It’s braai weather but what if you wanted something else cooked on the fire? A good ol’ potjiekos day is definitely in order and we have a special recipe for you. Not only is this a delicious chicken potjie, it’s a Spicy Chicken Potjie. If you have a big group of people to feed, potjiekos is the way to go. Spicy Chicken Potjie is best enjoyed with rice and tons of laughter and good time celebrations.

Potjiekos is just the name for a delicious stew cooked in a cast iron pot as if you were camping. South Africans created a whole tradition around it. Most potjie recipes take many hours to cook, but because it’s a Spicy Chicken Potjie, the time will be less. Less cooking time gives you more time to enjoy the company of your friends and family. You will be combining many different peppers and spices like chillies and curry to give your potjie great flavour. It’s a simple recipe that provides the taste of love you’ve been looking for.

Ingredients

4 tbsp oil

water to cover the chicken in potjie

½ cup Coca-cola

3 kg chicken thighs and drumsticks

1 kg baby potatoes

8 carrots peeled

400 g baby marrows

300 g green beans

2 red onions, chopped

2 white onions, chopped

2 red peppers

4 yellow peppers

1 tbsp Raja mild and spicy

3 tbsp paprika

1 tsp peri peri

1 red chillie

1 green chillie

6 cubes chicken stock

1 tsp thyme

100 g brown onion soup

pinch salt

Method

Heat the oil and add the white onion and let it brown. Add all the spices and salt. Add the chicken pieces and fry until golden brown. Add enough water to cover the chicken. Cover the potjie and let it simmer for 15 – 17minutes. Add the vegetables, starting with carrots and cover the potjie for 3 minutes.Add all the other vegetables, cover the potjie and let it simmer for 20 minutes.Mix the brown onion soup and coke and pour over. Allow to simmer for another 5 minutes.Serve with rice or steamed bread.
