250 g butter
110 g Icing sugar
330 g cake flour
1 teaspoon vanilla essence
Preheat the oven to 180°C.Grease a 30cm x 23 cm tray.Using an electric beater, cream together butter and icing sugar until light and fluffy.Add vanilla.Add sifted flour and mix.Dough might look crumbly; it will come together when squeezing it with your hands.Place dough in tray and flatten out using your hands to fill out the tray.Poke holes using a fork.Bake at 180°C for 12 – 15 minutes. Until golden brown.Sprinkle castor sugar on top and slice into rectangles while still warm.Allow to cool completely before serving.
