Coffee biscuits – Classic bites to dip in your favourite hot drink

We all need a little sweet treat to accompany teatime. These coffee biscuits are the ultimate bite that will tempt you to enjoy one after the other.

So what makes these coffee biscuits so special? It must be the coffee fudge filling. One crunchy, baked biscuit is slathered with a delicious coffee-fudge filling. Then sandwich it with another biscuit and you have the ultimate indulgent biscuit.

These biscuits are regarded as a bit of a luxury in South Africa because not only are they super delicious, but they are also a bit labour-intensive to prepare. However, every moment spent on these coffee biscuits is worth it as they are just so tasty.

Ingredients

Biscuits

1 kg cake flour

1 teaspoon salt

330 ml sugar

400 g butter

1 cup golden syrup or honey

1 tablespoon bicarbonate of soda

½ cup very strong black coffee

1 teaspoon vanilla essence

Coffee fudge filling

2 tablespoons strong instant coffee

2 tablespoons boiling water

375 ml white sugar

150 g butter or margarine

cup + 2 teaspoons milk

1 teaspoon vanilla

Method

BiscuitsSift the cake flour and salt together in a large mixing bowl.Melt the butter, sugar and golden syrup in a saucepan and stir until sugar is dissolved. Remove from heat and cool.Add vanilla to the cooled mixture.Dissolve the bicarbonate of soda in a little coffee. Add this mixture, and the rest of the coffee, to the cooled butter and syrup mixture.Add to flour and mix well to form a soft dough. Cover and leave overnight.Use a sausage maker with a cookie fitting to form long strips of dough.Cut the cookies into even lengths. A square 5 cm cookie cutter is ideal.Place on greased cookie sheets and bake at 200 ºC for about 12 minutes until golden brown and baked through.Cool the biscuits on wire racks.FillingDissolve the coffee in the boiling water and add the remaining ingredients, except the vanilla.Boil for 8 minutes, uncovered.Remove from the stove, and beat with a wooden spoon until thick and cooled.Sandwich the biscuits together with the coffee fudge filling.
